Many hummus producers start in a commercial kitchen and grow into a factory, often for a retail contract or a wholesale customer. The recipe usually survives the move; the way of working does not. Larger batches, heavier handling, formal food-safety systems and different utilities all arrive at once, and the equipment has to suit all of them.
Kitchen versus factory
| Aspect | Commercial kitchen | Factory |
|---|---|---|
| Batch size | A few to a few dozen kilograms | Hundreds of kilograms per batch |
| Handling | Bowls lifted and emptied by hand | Bowl tilt, Euro-bins, transfer equipment |
| Hygiene | Kitchen cleaning routine | Validated cleaning procedures and records |
| Documentation | Basic temperature and cleaning logs | Full HACCP plan, batch codes and traceability |
| Power supply | Usually 230 V single-phase | 400 V three-phase |
| Staffing | Cooks | Trained machine operators and shift planning |
Each row changes what you need from a machine.
Batch size and handling
Factory batches are too heavy to empty by hand. The HummusMaster industrial machines use a mechanised lid and bowl tilt for discharge, and the L200IV adds Euro-bin discharge and optional tipper equipment, so product moves to the next stage without manual lifting. The industrial models are rated on hummus as follows:
| Model | Bowl volume | Motor | Rated hummus output per hour |
|---|---|---|---|
| L120IV | 120 L | 15 kW | 700 kg |
| L200IV | 200 L | 22 kW | 1300 kg |
Both run at 600–2500 rpm with LED touchscreen control and can be fitted with an optional motorised scraper and an optional vacuum system. Processing under vacuum draws less air into the product, which is useful when appearance and shelf life matter.
Between kitchen and factory sits the standing range: the L45IV and L65IV (45 and 65 L, rated at 225 and 330 kg of hummus per hour) are a common step for producers who have outgrown a kitchen but are not yet running a full line.
Hygiene and documentation
In a factory, cleaning has to be repeatable and recorded, not just done. Plan cleaning time into every shift, and choose equipment that is quick to dismantle and clean. The L200IV can be specified with optional CIP equipment. Your HACCP plan will set critical limits, such as cooling times and temperatures, and every batch needs a code that links it to its raw materials and production records. These requirements come from food-safety regulations and your customers, so agree them before choosing equipment.
Power and installation
The industrial machines need a 400 V three-phase supply, and the motors are large: 15 kW on the L120IV and 22 kW on the L200IV. Check supply capacity, floor loading and access for installation early in the project, because these are slow and expensive to change later.
Cooked products
If the range includes cooked sauces or fillings, the heated double-jacket models (L75IV-HJ and L150IV-HJ) cook and process in one bowl, with water-jacket heating up to 85 °C or oil-jacket heating up to 160 °C.
Next steps
Once the processing stage is settled, the rest of the line follows; our production line guide covers balancing the stages, and the private label guide looks at retail requirements. HummusMaster industrial machines are built by YAZICILAR / KITPRO in stainless steel and backed by spare parts and service, and HummusMaster can also plan and install a complete production line, including commissioning and operator training. Share your target output and we will recommend the right machines or a complete line.
Frequently Asked Questions
What changes when hummus production moves from a kitchen to a factory?
Batch size, material handling, hygiene procedures, documentation and power supply all change. Batches become too heavy to empty by hand, cleaning must be validated and recorded, and every batch needs traceability under a full HACCP plan.
How is product discharged from an industrial cutter mixer?
The HummusMaster industrial machines use a mechanised lid and bowl tilt. The L200IV adds Euro-bin discharge and optional tipper equipment, so product moves to the next stage without manual lifting.
Why choose a vacuum option on an industrial cutter mixer?
Processing under vacuum draws less air into the product, which helps appearance and can support shelf life. On the HummusMaster L120IV and L200IV the vacuum system is optional.
Is there a step between kitchen machines and industrial machines?
Yes. The standing L45IV and L65IV, rated at 225 and 330 kg of hummus per hour, suit producers who have outgrown a kitchen but are not yet running a full production line.
