Industrial Cutter Mixer Specifications Explained: What Each Number Means

An industrial cutter mixer datasheet is a list of numbers that are easy to compare and easy to misread. This guide explains what each specification means in production and which questions to ask before you choose a model.

Two industrial cutter mixers can look similar on paper and behave very differently on the factory floor. The datasheet tells you a lot, but only if you know what each line means and what it leaves out. Here is how to read the specifications that matter most when you buy a machine for hummus and other pastes.

Bowl volume is not batch size

Bowl volume is the size of the bowl, not the amount you can process in it. A cutter mixer needs free space above the product for the blades to cut and circulate the mass, so the working batch is always smaller than the nominal volume. When you compare machines, ask each supplier for the recommended working fill for your product, and calculate your batches with that figure rather than with the bowl size.

Motor power and speed range

Motor power, 15 kW on the L120IV and 22 kW on the L200IV, tells you how well the machine holds its speed in a dense paste. Hummus is heavy and sticky; a motor that is small for the bowl slows down under load, which lengthens the cycle and warms the product.

The speed range matters as much as the power. Variable speed, 600–2500 rpm on the standard industrial models, lets the operator break down chickpeas at lower speed and finish the paste at higher speed, and lets the same machine handle coarse and smooth products. The heated models run at 500–2700 rpm.

Rated output per hour

The rated output, 700 kg of hummus per hour on the L120IV and 1300 kg on the L200IV, describes the processing capacity of the machine. Your real output per shift also depends on loading, discharge and cleaning time between batches, and on the stages before and after the mixer. Use the rating to compare machines, and plan your line with the time each full batch cycle takes.

Discharge and handling

At industrial scale, moving the product out of the bowl takes as much planning as making it. The industrial models open with a mechanised lid and tilt the bowl for discharge, controlled from an LED touchscreen. The L200IV adds dual control panels, Euro-bin discharge and optional tipper equipment, so batches move to the next stage without manual lifting.

Options worth knowing

  • Motorised scraper (optional): keeps product moving off the bowl wall during the cycle.
  • Vacuum (optional): processing under vacuum draws less air into the product.
  • CIP equipment (optional on the L200IV): supports a repeatable cleaning routine.
  • Heating jacket (HJ models): water-jacket heating up to 85 °C or oil-jacket heating up to 160 °C, for products that are cooked and processed in the same bowl.

Questions to ask before you buy

  1. What is the recommended working batch for my product in this bowl?
  2. How long does a full cycle take, including loading, discharge and cleaning?
  3. Which options do I need now, and which can be added later?
  4. Is my site ready for a 400 V three-phase connection of this size?
  5. How are spare parts, service and operator training provided?

HummusMaster industrial machines are built by YAZICILAR / KITPRO in stainless steel, are CE and UL certified, and are backed by spare parts and service. See the full range on the industrial machines page, read how the mixer fits into a production line, or tell us your product and target output and we will recommend a configuration.

Frequently Asked Questions

What is the difference between bowl volume and working batch?

Bowl volume is the nominal size of the bowl. The working batch is the amount you can actually process in it, which is always smaller because the blades need free space to cut and circulate the product. Plan production with the working batch.

What does the rated hummus output per hour include?

It describes the processing capacity of the machine: 700 kg of hummus per hour on the L120IV and 1300 kg on the L200IV. Real output per shift is lower once loading, discharge and cleaning time between batches are included.

Do industrial cutter mixers need a three-phase power supply?

Yes. The HummusMaster industrial models, standard and heated, run on 400 V three-phase, with motors of 15 kW or 22 kW. Check the capacity of your site connection early in the project.

Which options are available on industrial models?

A motorised scraper and a vacuum system are optional on the L120IV and L200IV. The L200IV can also be fitted with CIP and tipper equipment, and the HJ models add a water or oil heating jacket.
