Hummus Production Equipment

The machines a hummus operation needs, what each one does and how to size it, from a restaurant kitchen to a factory.

Hummus production equipment is less one machine than a short chain of them. One machine actually makes the hummus: the cutter mixer, which turns cooked chickpeas, tahini, lemon juice, oil and salt into a smooth paste. Everything before it prepares the chickpeas, and everything after it protects the finished product. This guide lists the equipment by the job it does, explains what to look for in each piece and shows which machines HummusMaster builds. How the stages are arranged and balanced is covered in our guide to the hummus production line.

The equipment at a glance

EquipmentWhat it doesWhat to look for
Soaking tanks or containersRehydrate dry chickpeas before cookingEnough volume for a day of batches, a drain outlet, surfaces that are easy to clean
Cooker or kettleCook the chickpeas until fully softEven heat and a batch size that matches the mixer
Draining and coolingRemove cooking water and bring the chickpeas to processing temperatureControl of moisture and temperature before processing
Cutter mixerGrind and emulsify all ingredients into a stable pasteBowl volume, speed range, scraper and the way the paste is discharged
Chilling and holdingBring the finished paste down to storage temperatureCapacity that keeps up with the mixer, times set by your HACCP plan
Filling and packingPortion into tubs, trays or foodservice packsFill weight, sealing and batch coding

In a restaurant several of these jobs are done with ordinary kitchen equipment: a large pot, a colander and a refrigerator. In a factory each one becomes a dedicated machine.

The cutter mixer: the machine that makes the hummus

The texture of the hummus is decided in the cutter mixer. High-speed blades cut the chickpeas, while a double-acting scraper keeps returning paste from the walls and the lid to the blades, so the whole batch is processed evenly and no grainy pockets are left. Variable speed matters more than top speed: you start slowly to combine the ingredients, then finish at high speed for a fine, creamy paste.

HummusMaster builds three series of cutter mixers:

SeriesBowlHummus output per hourTypical user
Countertop6–12 L30–60 kgRestaurants, hummus bars, hotels
Standing20–65 L90–330 kgCentral kitchens, catering, mid-sized producers
Industrial120–200 L700–1300 kgHummus factories and food manufacturers

The industrial L120IV and L200IV can be fitted with an optional motorised scraper and an optional vacuum system. The L200IV adds Euro-bin discharge and optional CIP and tipper equipment, which helps when the machine has to fit into a line. For recipes that are cooked or warmed in the bowl, the heated L75IV-HJ and L150IV-HJ models have a water jacket for up to 85 °C or an oil jacket for up to 160 °C.

Choosing equipment by scale

Restaurant or hummus bar

Up to about 20 kg of hummus a day, the equipment list is short: a pot or kettle to cook the chickpeas, a countertop cutter mixer with a 6 to 12 L bowl and refrigerated storage. The machine should clean quickly, because it often makes several recipes in one morning.

Central kitchen or caterer

When one kitchen supplies several outlets or events, chickpeas are soaked and cooked in larger quantities and the mixer runs several batches in a row. A standing machine with a 20 to 65 L bowl is the usual choice here, together with a larger kettle, enough chilled storage and a simple portioning routine.

Factory

A factory line has dedicated equipment for every stage: soaking tanks, cookers, draining and cooling, one or two industrial cutter mixers, chilling, filling and a cleaning system. Running two mixers in parallel keeps the line going while one is cleaned or switched to another product. Cooking and cooling capacity must be sized against the mixer, otherwise the most expensive machine on the line stands waiting.

Questions to answer before you buy

  • How much hummus do you need per day or per shift, and on your busiest day?
  • Will the equipment also make other products? The same cutter mixers make dips and sauces, as our dip and sauce machine guide explains.
  • Which power supply is on site? Countertop models run on 230 V single-phase; most standing models and all industrial models need 400 V three-phase.
  • How much floor space and access do you have for loading, discharge and cleaning?
  • How will you clean between products, especially when allergens change?
  • How much growth do you expect in the next few years?

Next step

Tell us your target output, your products and your site, and we will recommend the right cutter mixer. For factory projects HummusMaster also delivers complete lines: layout and capacity planning, installation, commissioning and operator training. The machines are built by YAZICILAR / KITPRO in stainless steel and are CE and UL certified. To see what drives the cost, read our guide to the hummus machine price.

Frequently Asked Questions

What is the most important piece of hummus production equipment?

The cutter mixer. It is the machine that actually makes the hummus, and its blades, speed control and scraper decide the texture. The other equipment prepares the chickpeas or protects the finished paste.

Do I need a separate cooker for the chickpeas?

Chickpeas must be fully cooked before they go into the cutter mixer. Small kitchens use a large pot or kettle; factory lines use cookers sized to keep up with the mixers.

Can the same equipment make other products?

Yes. HummusMaster cutter mixers also make baba ganoush, muhammara, toum, pesto, guacamole and other dips and sauces.

Does HummusMaster supply a complete production line?

Yes. For factory projects we plan the layout and capacity, install and commission the line and train your operators.
